Sounds like a paradox, right? Yummy and healthy? A healthy pie? It’s true. And I’ve served it to some guests who typically eat a standard American diet and they thought it was yummy too!
It is gluten free, grain free, sugar free, and dairy free. But yummy! Really, it is! And easy – only about 10 minutes to prepare before baking!
It’s more of a summer-only recipe though, because good fresh fruit is a must to make it delicious.
So, here’s the recipe:
First, make your crust by mixing
- 1 ½ cups almond flour
- ¼ cup melted salted butter
- 1 t. cinnamon
Press it into a pie pan to form your crust. (this is so much easier than rolling out a typical pie crust! It only takes a couple minutes to mix and press)
Then start on your filling. In a food processor or powerful blender (like a vita-mix or similar), add
- 2 ripe bananas
- 1 T. lemon juice
- ½ t. vanilla extract
- 3 eggs
- 2/3 cup coconut milk. (if you’re not dairy free, you can use 2/3 cup of cream instead of coconut milk if you’d like).
Mix it all until smooth. Taste it and make sure that it will be sweet enough for you. If it’s not, you could add a little stevia to make it sweeter.
Then pour the banana filling into the pie crust and bake at 350 degrees for about 35 minutes, or until the center of the pie is firm. Let your pie cool.
Now top with chopped fresh fruit! You can use any type of fruit you’d like. Our favorite is strawberries and blueberries, but when blackberries were in season, we used those too.
We haven’t tried it, but I’m sure it would be good with some whipped cream to top it too.
